Chef Jacob at Café Alfresco bistro in Dunedin, FL, has a history of spending Christmas Eve at his grandmother’s, where he and his family will eat typical holiday fare and a dish with beets. Wait, what?  Beets?

Beets, as you may know, are as polarizing as cilantro. In fact, you may have even gagged at the word “beets.” We’ll even go as far as to say you could be to beets what the Grinch was to Christmas.

Maybe Chef Jacob could be the citizens of Whoville to your Grinch and make your heart grow three sizes – we’ll make you like (maybe even love) beets. This salad recipe just might do the trick:

  • Arugula
  • Bacon
  • Red Onion
  • Sherry Vinegar & Oil
  • Salt & Pepper
  • Bleu Cheese, and (wait for it……)
  • Baked Beets (Bake 1 hour at 350° and peel while beets are still warm)

Add the ingredients, seasoning to taste, and toss.  Voila! A tasty salad that didn’t come in a bag.

Once you “give beets a chance,” you may even make a place for it on the dinner table. Be the reformed Grinch this Christmas dinner!
